9 Sweet Pepper Fritters


This month for the Gluten Free Ratio Rally, the theme is Fritters and Doughnuts! As I've mentioned in a few other posts this past month, work has been super crazy for me. That's one reason why I always look forward to the beginning of the month, is the great variety of awesome themed recipes.

Fritters use a similar batter to pancakes, and are normally fried. For this recipe, I didn't have enough oil when making them, so I went with the lower-calorie approach of cooking them on a pan (giving them a similar appearance to pancakes).

I served them with some pork ribs that I cooked in a pressure cooker, which I'll post the recipe to later Wednesday.

Serves 12 fritters
Prep Time 10 minutes
Cook Time 15 minutes

Ingredients
2 oz pancetta
1 small sweet pepper
4 oz white rice flour
2 oz potato starch
2 oz tapioca starch
2 tsp chives
1 1/2 tsp oregano
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
2 tsp salt
2 tsp baking powder
8 oz milk
2 eggs

Steps
Dice the pepper and pancetta. In a small pan, cook the pancetta until it is crispy. Add the pepper to the pan, and cook for about 3-4 minutes, removing the items from the heat when cooked.

In a large bowl, combine the flours, starches, spices, powder, and salt. To this whisk in the eggs and the milk. Once everything is whisked together, add in the peppers and pancetta.
Heat a non-stick pan on medium heat. Pour the fritter batter by the quarter cup, and flip after about 2 minutes. Cook for another 2.

1 Gluten Free Pork Burgers


So I've eaten two burgers in the past two years, this recipe being one of the two. Last summer I went to a cookout in DC where there were salads, burgers, and hot dogs. To avoid eating wheat in the buns, I skewered the burger on a fork and ate it almost like a giant meat lollipop. I can definitely say that I got a few odd looks.

So I was very happy to find Udi's Gluten Free Bagels in my grocery store. All I have to say is I love Udi's, they has such amazing texture in taste in their projects. I fully recommend it to anyone who has to eat gluten free.
Prep Time: 10 minutes
Cook Time: 6-8 minutes
Yields: 2 burgers

Ingredients
3/4 lb ground pork
1/4 cup gluten free Italian or plain breadcrumbs
2 oz pancetta, diced
1/4 cup Pecorino Romano cheese
1 tbsp oregano
2 tsp garlic powder
2 tsp onion powder
salt and pepper
2 Udi's Gluten Free Bagels
Ketchup, onions, baby spinach (and any other condiments of your preference)

Steps
1. Combine the pork, crumbs, pancetta, cheese, oregano, powders, salt and pepper. Divide evenly into two patties.
2. Preheat a grill pan to medium heat and lightly oil. Place the patties on the grill pan, and let cook for about 3-4 minutes. Flip the patties and cook for another 3-4 minutes. 
3. Remove the burgers and place the bagels face down on the grill, allowing them to form grill marks. Will take about 4 minutes
4. Assemble the burger, topping with ketchup, onions, and spinach.

0 Gluten Free Basil Sun-Dried Tomato Pizza


I made some Gluten Free Stuffed Pork earlier this week (link here), but ended up with a ton of leftover Feta cheese. Thus, I took the filling recipe from the stuffed pork, and used it to top a pizza. I used gluten free store bought crust, and all together it resulted in a quick and tasty pizza that can be used for a dinner or a snack. Just top with some slices of pancetta and follow the directions for baking your pizza crust!

0 Gluten Free Beef Stew


I believe soups and stews are wonderful foods to make when you don't have a lot of time during the week to cook but still want to have a healthy meal. During busy weeks, I cook a stew on Sunday so I can microwave it for dinner the next few nights.

One stew recipe I like is one of Paula Deen's (recipe link here), with a few modifications.
Browning the beef
1. Before browning the beef, brown about 3 ounces of diced pancetta or bacon. The addition of the pancetta adds a wonderful salty pork taste to the stew.
2. Substitute the 2 cups of water with 1 cup of beef broth and 1 cup of a good red wine.
3. When adding the wine and beef broth, add 2 tablespoons of balsamic vinegar.

2 Gluten Free Teriyaki and Ricotta Meatballs


I love meatballs and pasta sauce; they were one of the meals when I was a kid. A few days ago I saw a meatball recipe on TV and wanted to make a variation on traditional meatballs. The meatball recipe is based on one of Rachael Ray's (link here) recipes. Instead of cooking them in tomato sauce, I saute the meatballs in a teriyaki sauce for a few minutes and serve it with rice. Its a nice combination of Italian and Asian flavors that any pork lover would like. Also, if you have any fresh parsley or oregano feel free to replace the dry herbs with them.

Yields: ~21 meatballs
Prep Time: 20 minutes
Cook Time: 25 minutes

Meatball Ingredients:
6 tbsp gluten free Glutino bread crumbs
1 lb ground pork
4 oz pancetta, diced finely
1 egg
2/3 cup ricotta cheese
1 tsp parsley
1 tbsp oregano
4 leaves fresh basil
1 tbsp onion powder
3 cloves garlic, minced
1/2 cup grated Parmesan Cheese

Teriyaki Ingredients:
5 tbsp gluten free soy sauce
1/2 tsp fresh grated ginger
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 cup brown sugar
2 tbsp white wine
1 tsp paprika

Steps:
1. Preheat oven to 400F. Line a baking sheet with parchment paper.
2. In a medium pan over medium heat, cook the pancetta until browned. Remove the pancetta from the pan and let cool for about 5 minutes.
3. In a medium bowl, mix the all of the meatball ingredients until thoroughly mixed and evenly distributed. 
4. Form meatballs in your hands, about the size of your palm (about 2 inches wide), and place onto the cookie sheet an inch apart from one another. Bake in the oven for about 25 minutes, flipping them in between. 
5. While the meat balls are cooking, combine all the teriyaki ingredients in the pan that you cooked the pancetta in. Cook over low heat for about 5 minutes, leaving on low while the meatballs cook.
6. When the meatballs are done, place in the teriyaki sauce and saute on low heat for about 2-3 minutes. Serve with white or brown rice.

0 Quick and Easy: Gluten Free Turkey and Bacon Biscuits


As a part of my experiment with Bisquick GF mix (see my review here), I decided to make some quick sandwiches out of them for dinner. For the pictures of this recipe, you'll see that I use biscuits made from Bisquick. Instead of Bisquick GF biscuits, I recommend using this recipe, which takes about 20 minutes to bake.

Yields: 10 sandwiches
Prep Time: 10 minutes
Bake Time: 20 minutes

Ingredients:
-10 Homemade buttermilk biscuits (recipe here, make slightly larger for sandwich use than recommended in recipe)
-Deli Turkey
-2 Slices Bacon
-Honey Mustard

Steps: 
1. Follow the recipe linked in the ingredients list.
2. As the biscuits bake, on medium low heat cook the bacon in a skillet. After about 5-6 minutes flip the bacon and cook for another 4 minutes. Remove from pan and pat dry with paper towels. Slice bacon into 2 inch pieces.
3. Slice the biscuits in half, and spread honey mustard onto the insides of the biscuits, layering turkey and bacon inside.
