0 Gluten Free Cinnamon Pull Apart Biscuits in a Jar for #SundaySupper



Hey everyone, this week's #sundaysupper is inspired by a creative cookbook called desserts in jars by Shaina Olmanson. The title is pretty self explanatory, but all the recipes in the book are baked or presented inside of jars. It's a super creative concept and is an inspired way of presenting food to your friends and family. It's also a great way of giving food gifts to friends, as you can seal it up and add whatever decorations on the outside that you desire.

Many of this week's recipes are very similar to recipes you'll find in the book, while others are wildly creative dishes inspired by the spirit of the book. My recipe is inspired heavily by the desserts in jars recipe Pull-Apart Cinnamon Breads. I've made alterations to the recipe to adapt it to gluten free and to cater to my tastes. It took me two experiments to find the texture and taste that I wanted in a gluten free breakfast dessert.

As you can see from the image to the right, the dough doesn't rise and expand heavily. It took me a lot of experimentation with loaf bread to create a light and airy texture, and this recipe uses a dough that has a texture closer to a biscuit or breakfast roll. In my first attempt the breads were too dense, so I added some baking powder and soda and let them rise a little longer to get a texture that was less dense.

Sunday Supper Desserts In Jars:
Gluten Free Cinnamon Pull Apart Biscuits in a Jar

Creates two biscuits in jars
Active Prep Time 15 minutes
Inactive Prep Time 2 hours
Bake Time 25 minutes

Ingredients
1/2 cup milk
1 1/2 tbsp water
1 1/4 tsp yeast
2 tbsp sugar
1 1/2 cup mama's gluten free almond flour blend, or your favorite gluten free blend
1 1/2 tsp xathan gum
1 tsp baking powder
1/2 tsp baking soda
4 tbsp butter, melted
1/2 cup light brown sugar
1 1/2 tsp cinnamon

Steps
In a small cup, combine the milk, water and sugar. Microwave for 45 seconds. Remove and stir the liquid until the sugar has dissolved. Add the yeast and set aside for 5 minutes.

In a medium bowl combine the flour, gum, powder, and soda. In a medium mixing bowl, transfer the wet ingredients from the cup into the mixing bowl. Mix in the flour blend, and stir until a dough forms and becomes a ball. Cover with a towel and set aside in a warm place for an hour.

Remove the dough from the bowl and place onto a cutting board covered with parchment paper. Flatten the dough using your hands into about 1/2 inch thickness. Cut the dough into 1 inch by 1 inch squares. In a small bowl, combine the sugar and the cinnamon. Dunk each piece of dough into the butter, and then cover with the cinnamon sugar. Evenly distribute the dough between the two jars. Once all the dough has been placed in jars. Cover the jars with a towel and set aside in a warm place for another hour. Meanwhile, preheat the oven to 350F.

Place the jars onto a baking sheet and into the oven for 25 minutes. Remove and serve while warm, or let them cool and cover with a lid. They can be reheated to warm if placed in a 200F oven for 5 minutes.

4 1-2-3 gluten free Biscuit Mix: Cinnamon Rolls


A couple weeks ago, I heard that you could easily make gluten free cinnamon rolls using 1-2-3 gluten free biscuit mix. The mix is gluten free, dairy free, tree nut free, egg free, and soy free. It's versatile for anyone with food allergies as substitutes can be used as needed.

The 1-2-3 gluten free website has a great wealth of recipes that uses their mixes, and this cinnamon roll recipe is based upon two 1-2-3 gluten free recipes:

1-2-3 Cinnamon Roll Recipe

I altered up the recipes above. I used 2% milk in the biscuits, and mixed the melted butter and cinnamon sugar before spreading to minimize the mess and evenly distribute the filling. I also created a cream cheese frosting to top the rolls. I found the biscuit mix to create a well-textured pastry that was able to hold the cinnamon filling well, and recommend this to anyone gluten free craving biscuits.
Produces 8 rolls
Prep Time: 30 minutes active, 30 minutes inactive
Bake Time: 40 minutes


Ingredients

Biscuit
1 package 1-2-3 Gluten Free® Southern Glory Biscuit Mix
6 Tbsp. butter, cold, cut into pieces
1 cup 2% milk
Filling

6 Tbsp. butter, melted
1 cup sugar
⅓ cup cinnamon
Frosting 

4 oz cream cheese
3/4 cup powdered sugar
1 tbsp milk
1 tsp vanilla




Preheat oven to 375F. Grease the inside of a round 9" cake pan.


Add the butter into the mix and knead until it has the texture of coarse meal. Add milk and stir until the mix has formed a dough. Store in a bowl and cover. Store in the fridge for 30 minutes


In a small bowl, mix the butter, sugar, and cinnamon together.

Using a rolling pin, roll the dough into a rectangle between two sheets of parchment paper until 1/4 inch thick. Spread the cinnamon butter into the roll, leaving an inch of one end uncovered. Roll into a log, starting at the end where the cinnamon touches the edge. Roll tightly, and cut into 1 inch thick rolls. Place in the pan, and bake for about 40 minutes or until the top is golden brown.
To make the frosting, whip the cream cheese, sugar, milk, and vanilla. Spread onto the warm rolls, and enjoy!

2 Gluten Free French Toast


For the past few years, I've been trying to make a gluten free bread with a texture and taste that I actually enjoy. Believe me, if you haven't made gluten free bread before, it is definitely a hard recipe to perfect. This past weekend though, I made the best gluten free bread I've made so far, so I decided to make a simple french toast for breakfast one morning. Its super tasty, and super easy to make! I've tried making it before with store-bought gluten-free bread, but nothing compares to a fresh loaf...

Prep Time: 10 minutes
Cook Time: 5 minutes
Servings:  4 slices

Ingredients
2 eggs
1/3 cup milk
1 tbsp granulated sugar
2 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
4 slices gluten free bread
1 tbsp butter

Steps
In a small bowl, whisk together the eggs, milk, sugar, cinnamon, nutmeg, and cloves. Pour into a shallow pan. Place the four pieces of bread into  the mix, and then flip over and let soak in the egg mix while preheating a pan.

Place a skillet onto the stove over medium low heat, and add the butter. Once the butter has melted and the pan is hot, drain each piece of bread of any excess egg, and then place onto the skillet. Cook on each side from 2-3 minutes, until the egg coating is browned on each side. Serve with powdered sugar and enjoy!

19 Ratio Rally - Cinnamon Lemon Cookies


Hey everyone, I hope you're having a good December so far, its time for the Gluten Free Ratio Rally again! This month our theme is cookies, and I am looking forward to seeing all the wonderful gluten free recipes! For the ratio rally, I wanted to make cookies that tasted like snickerdoodles with a twist. I added lemon zest to the recipe, and it really livens up the snickerdoodle cookies! They're really easy to make and tasty too!
As for the ratios, cookies are some of the most fun to experiment with changing the ratio. For example, the base ratio for a cookie is 1:2:3 sugar:fat:flour. My ratio is closer to being approximately 2:1:2 sugar:fat:flour, which is a comparable ratio to a drop cookie (ie chocolate chip cookies). The higher ratio of sugar creates a crispy texture on the outside of the cookies, while still tender inside. Cinnamon Lemon Cookies


Servings 18 cookies
Prep Time 15 minutes
Bake Time 18 minutes

Ingredients
200 g sugar
113 g butter
1/2 tsp vanilla
1 egg
zest of 2 lemons
1 tsp baking powder
96 g white rice flour
32 g tapioca flour
64 g potato starch
1 tsp xantham gum
1 1/2 tsp cinnamon
cinnamon sugar (about 3 tbsp)

Steps
Preheat the oven to 350F. Grease two baking sheets.
In a small bowl, mix the flours, powder, gum, and cinnamon. In a medium bowl whip the sugar and butter until fluffy. Mix in the vanilla, egg, and zest. Stir in the flour mix, adding half a cup at a time, until fully combined and a dough forms.
By the tablespoons, drop the dough onto the sheets, separated by 1 inch around each cookie. Sprinkle each dough ball with cinnamon sugar, and bake for 18 minutes. Let the cookies cool for a bit before eating, and enjoy!

64 Cookielove: Gluten Free Cinnamon Roll Cookies


Happy December everyone! Is it just me, or is it crazy insane that it's already December? Oh well, at least its that time of the year or Christmas, time with friends and family, and most importantly of all: cookies. I've always associated cookies with the Christmas season, so what better way to celebrate the month of December than with a #cookielove blog hop. 

Last month was my first time co-hosting a #love event (catch last month's event, squash, over here), and I'm excited to co-host #cookielove this month. For those who are reading a #love post for the first time, it's a monthly event where food bloggers share recipes of a common theme (i.e. apple, squash, cookies, etc). Its not only a fun way of sharing food blogs, but its a great way of finding high quality themed recipes. I'm excited to see all the creative recipes that come out of this cookie theme. I plan on posting a variety of recipes this month, each as a different type of cookie. So here is what will (hopefully) be my first, a variation on the sugar cookie. Sugar cookies are basically recipes that have a higher ratio of butter and sugar to flour, resulting in a creamy, sweet texture. This gluten free recipe is inspired by cinnamon rolls. I've said it before and I'll say it again, there are some foods that you absolutely crave when you're gluten free. For me, cinnamon rolls are one of those things. It's the smell that absolutely leaves me in desperate need for a bite. This cookie gives you that satisfaction. When you bite into it you get the creaminess of the sugar cookies and the crunchiness of the baked sugar, all topped with a tangy cream cheese frosting. Gluten Free Cinnamon Roll Cookies

Active Prep Time: 25 minutes
Inactive Prep Time: 20 minutes
Bake Time: 18 minutes
Servings: 18 cookies

Ingredients


1/2 cup powdered sugar
3/4 cup room temperature butter
2 tsp vanilla
1/2 cup potato starch
1/3 cup tapioca flour
2/3 cup white rice flour
2 tsp baking powder
1 1/4 tsp xantham gum

For the filling:
1/4 cup sugar
1 tablespoon cinnamon

For the frosting:
4 oz cream cheese
3/4 cup powdered sugar
1 tbsp milk
1 tsp vanilla

Steps


In a medium bowl, whip the sugar, butter, and vanilla until fluffy. Mix in the flours, powder, and gum until a cookie dough has formed. Roll the dough into a ball, wrap with plastic wrap, and refrigerate for 10 minutes.

Prepare a cutting board by covering it with a sheet of plastic wrap. Remove the dough from the refrigerator, unwrap it, and place it on top of the board. Roll the dough into a rectangle, about 1/4 inch thickness. Mix the sugar and cinnamon in a small bowl, and cover all but a one inch strip of dough with the filling. The bare strip will be used to seal the dough shut when rolled into a log.
To roll the log, start at the end that has the cinnamon sugar, with the bare strip-end furthest away. Tightly roll the dough into a log, using the wrap to lift and roll it. This should minimize tearing of the dough. Roll until the dough has formed a log, wrap in plastic wrap, and refrigerate for about 10 minutes. While the dough refrigerates, preheat oven to 350F.
Grease a baking sheet, and unwrap the dough log. Cut the dough into quarter inch thick cookies, and lay onto the baking sheets. Bake for about 18 minutes, and let cool completely.

While the cookies cool, whip together the cream cheese and the sugar, adding the sugar by the 1/4 cup. Whip in the vanilla and milk until smooth, and frost the cookies.

0 Cinnamon Coffee Cake


Hey everyone! I really love making gluten free cake from scratch, and being able to control the texture and taste of it. However, the convenience of cake mix can really make baking go by faster. For this coffee cake recipe, I've used Betty Crocker Gluten Free Cake Mix, and it makes it super easy! I hope you enjoy this quick and easy recipe for gluten free coffee cake!

Prep Time: 20 minutes
Baking Time: 35 minutes
Serves: 12-18

Ingredients
1 box Betty Crocker Gluten Free Cake Mix
2/3 cup water
1 stick (1/2 cup) butter, room temperature
2 tsp vanilla
3 eggs

Filling
1/4 cup brown sugar
1/2 tsp cinnamon
2/3 cup chopped walnut

Topping
1 cup almond flour
1 stick cold butter, cubed
1/2 cup brown sugar
1 1/2 tsp cinnamon

Steps


Preheat the oven to 350F. Grease a square 8x8 or 9x9 pan. In a medium bowl, mix the cake mix, water, butter, vanilla, and eggs. Pour half of the batter into the pan.

In a small bowl, mix the filling ingredients, and pour over top the batter in the pan. Cover with the remaining batter. In another bowl, mix the flour, sugar, and cinnamon. Work the butter with the flour mix until course and crumbly. Pour over top the batter, and place in the oven for 35 minutes, and remove once an inserted toothpick comes out clean.

8 Gluten Free Cinnamon Pecan Scones

I've never been a huge consumer of scones outside of coffee shops, especially when there's a small selection of coffee shops that serve gluten free scones (Alexandria, VA has a great variety of these types of coffee shops). That's why I was excited that this month's Gluten Free Ratio Rally tasked the participants to create scone recipes.

Most recipes on the internet and in books measure ingredients based upon volume instead of weight. This past month I've purchased and read a Ratio Cookbook. The main message is that you can easily create any baked good based on simple weight ratios between flour, liquid, fat, etc. The best part is that once you find a ratio that you like, you can then add whatever additional flavors to the recipe to create a variety of sweet and  savory dishes. This is why I'm excited to participate in The Gluten Free Ratio Rally, a relatively new monthly event where a group of gluten free bloggers try to experiment with ratios to create amazing delicious recipes. For the ratio rally I purchased a food scale, and I've come to realize that it can be a wonderful tool in the kitchen.

This month we were to create a scones recipes, and since I joined the group this past week, I didn't have a large wealth of time to experiment. Because of this, I used a ratio that Caneel suggested of 4:2:1 (flour, liquid, fat). I love the flavor of cinnamon and cream cheese in the morning, so I wanted to create a cinnamon pecan scone for this month's challenge. I hope you enjoy!

Ingredients
25g butter, room temperature
55g shortening
75g millet flour
75g almond meal
100g white rice flour
50g tapioca starch
90g sugar
1/2 tsp baking powder
1 tbsp cinnamon
1/2 tsp ginger
150g light cream
1.5 tsp vanilla
1 egg yolk
10z almonds, chopped
15 oz pecans, chopped

Steps:
1. Preheat the oven to 350F.
2. In a small bowl, blend the butter and shortening together.
3. In a large bowl, sift the flours, starch, sugar, powder, cinnamon, and ginger. Stir to combine.
4. Using a fork or pastry tool, cut the butter and shortening into the flour mix until the mixture becomes coarse.
5. Stir the egg yolk into the mix, and combine until the egg is thoroughly distributed.
6. Slowly add the milk and vanilla to the mix, blending until a nice dough forms. Fold in the almonds and pecans.
7. Line cookie sheets with parchment paper, and use a spoon or small ice cream scoop to distribute the scones onto the sheet. Separate each dough ball by 1/2 inch to allow for spreading.
8. Place in the oven and bake for about 15 minutes, and let cool.
9. Frost the cooled scones with this cream cheese frosting.

14 Gluten Free Irish Potato Candies


A month ago if you had asked me what Irish Potatoes were, I'd tell you they were more than likely a method of cooking potatoes. A few weeks ago though, two of my friends brought me to a candy shop in Northern Virginia that has these delicious treats and I really wanted to try making some. Irish Potatoes are coconut and cream cheese nuggets that are rolled or dusted in cinnamon. Its a wonderful combination of sweet and creamy that's balanced out by the cinnamon. I've tried rolling these in cocoa powder, but they simply aren't as delicious as ones rolled in cinnamon.

Earlier this week I posted a recipe with virgin coconut oil in it, and mentioned that I would discuss it more in the latter half of this week. Virgin coconut oil is a great substitute in recipes that use butter or margarine, especially when you want a slight taste of coconut. Its high in antioxidants and can be a healthy addition to recipes.
Also in my preparation I use my mechanical pastry bag that I purchased from Williams-Sonoma that made the molding part rather easy. I tried finding it online, but had difficulty finding the model. Regardless, you could use any large pastry bag as long as the tip is between 1/4-1/2 inch thick, or else the candies will not turn out well.

Yields: ~3 dozen
Prep Time: 40 minutes
Inactive Prep Time: 20 minutes

Ingredients:
2 tbsp butter, room temp
2 tbsp virgin coconut oil
4 oz cream cheese
1 1/2 tsp vanilla extract
4 cups confectioners sugar
2 1/2 cup shredded coconut
2 tbsp cinnamon

Steps: 
1. In a medium bowl beat the butter and oil until combined. Beat in the cream cheese until fluffy.
2. Add the vanilla, and then beat in the sugar by the half cup (this prevents clouds of sugar flying everywhere and makes a more consistent batter). Beat in the coconut flakes until it forms a consistent mix.
3. Roll the dough into a ball and place into a refrigerator for 20 minutes for it to harden up a bit.
4. Either roll the dough into small logs with your hands, or use a icing bag or extruder to form 1" logs.
5. Once all dough is formed into balls or logs, roll in the cinnamon and lightly brush off the excess with a pastry brush. Store in an airtight container in a refrigerator, and leave at room temperature for 10 minutes before serving.

2 Gluten Free Apple Pie Cookies


After a rather busy/difficult week at work, I decided to make some irresistible cookies that I would have no problem eating an entire plate of. Well, mission accomplished. (Served with whipped cream or vanilla ice cream exponentially increases their awesomeness BTW).

These are pretty easy cookies to make, and I was able to make an entire batch on three medium sized cookies sheets.. These are also a fun cookie to make with others, as you can have friends or kids top each cookie with apples and crumbs.

Makes: 2 dozen cookies


Cookie Ingredients
Dry Ingredients:
1 1/2 cup gluten free flour blend (for this one I used a store brand composed of rice flour, tapioca starch, potato starch, and guar gum)
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
1 tsp cinnamon
Wet Ingredients:
1/2 cup butter, room temperature
1/2 cup brown sugar, packed
1/4 cup white sugar
1 egg
1 tsp vanilla

"Apple Pie" Filling Ingredients
2 Pink Lady apples
1 tsp cinnamon
1 1/2 tsp brown sugar
1/4 tsp salt

Topping Ingredients
2 tsp butter, room temperature
1/4 cup gluten free graham cracker crumbs
1/8 cup pecans, chopped
1 tbsp maple or white sugar

Steps
1. Preheat oven to 350F. Line cookie sheets with parchment paper.
2. In a medium bowl, mix the dry ingredients together. In another medium bowl, whisk the butter until light and fluffy. Beat in the 1/2 c brown sugar and 1/4 c white sugar by the 1/4 cup.
3. Once the sugar and butter are combined, beat in the vanilla and the egg. Whisk in the flour by the half cup.
4. Filling: Peel and dice the apples, and place into a small bowl. Mix with the sugar, cinnamon, and salt.
5. Topping: Mix together the topping ingredients in a small bowl until it forms a crumb like texture.
6. Form the cookies: Drop the cookies onto the cookie sheets in 2 tablespoon balls, 1-2 inches apart. Push in the middle of each ball lightly, and fill with 3-4 apple pieces. Top with topping crumbles. Place in the oven and bake for 13-15 minutes until golden brown around the edges. Once cool, serve with ice cream.
