33 #SundaySupper - Beef Pho Soup


In the past month, Virginia weather has ranged from early spring weather to cold disgusting winter weather. All the better reason to have a good soup recipe ready to eat under some nice warm blankets from the comfort of your home. This week Sunday Supper is bringing you soup recipes to warm your body and soul.

My recipe this week is pho soup. For those who aren't familiar, pho is a Vietnamese noodle soup made with either beef or chicken. It is a flavorful broth infused with Vietnamese spices, and served with noodles, beef, and fresh garnish. The beef is sliced very thin and added raw to the hot broth, which cooks the meat in a matter of minutes.I was introduced to it when I moved to D.C. and fell in love with it.

One of the keys to a good pho is a stock made from beef bones. One of the tricks to creating a clear soup is to parboil the bones. By boiling the bones for a couple minutes before creating the stock, all of the heavy grease and impurities are boiled out of the bones. The picture above shows the bones halfway through parboil, and as you can see the water is already fairly cloudy. 

Another easy method of enhancing the flavor in the soup is to lightly toast the spices before adding them to the broth. This brings out the aromatics in the spices, and releases some of the oils. By placing them in a cheesecloth bag before adding to the soup, it makes removal of the spices a lot easier.

A good pho also needs quality garnishes to add flavor to the soup. Before adding the noodles and beef to the soup, I like to prepare my cilantro, green onion, and onion so that I don't have to chop these while the broth cools. Fresh basil, bean sprouts, lime, and peppers (I don't have them pictured because I don't like adding peppers to mine) are wonderful to serve on the side so people can add what they want to the soup for more flavor.

Prep Time 30 minutes
Inactive Prep Time 4 hours to overnight
Cook Time 2 1/2 hours, 10 minutes when reheating broth

Broth Ingredients
2 pounds beef bones
4 quarts water
1 onion, quartered
1 3 inch piece of ginger root, quartered
2 tsp fennel seeds
2 tsp anise seeds
2 tsp whole cloves
2 cinnamon sticks
1 tbsp salt
1/4 cup fish sauce

Ingredients per Soup Bowl
1 cup of rice noodles
10 slices of thinly cut beef sirloin
1 handful of cilantro
2 thin slices of onion
1 scallion, thinly sliced

Garnish per Soup Bowl
2 lime quarters
handful of bean sprouts
3-4 leaves fresh basil


Steps
In a soup pot, cover the bones with water. Bring the water to a boil, and boil for 5 minutes. Drain the pot, and transfer the bones to a strainer. Rinse with warm water to get residual gunk off the bones. Clean the inside of the pot of any residue. Return the bones to the pot and add the 4 quarts water. Set aside.

Set the oven to broil, place the onion and ginger onto a pan and cook in the broiler for 5 minutes, until slightly charred. Add the onion and ginger to the pot. 

On a pan without any oil or grease, roast the seeds, cinnamon, and cloves over medium heat for 5 minutes. Transfer the spices to a cheesecloth sheet and tie with a knot. Set aside. 

Bring the stock base to a boil. Once boiling, add the spice bag, salt, and sauce to the pot. Reduce to medium heat and cover with a top. Simmer for 2 1/2 hours.

Once the simmering is done, remove the bones, spice bag, ginger, and onions from the pot. Let the soup cool to room temperature and then transfer it to the refrigerator for 4 hours to overnight. This will let the oil coagulate on top of the broth so you can remove it with a spoon. 

Once you are ready to serve, remove the soup from the refrigerator and reheat over medium heat. You want to heat it to about a minute or two before it begins to boil. While the soup reheats, prepare your rice noodles per the manufacturer's instructions. Be sure to rinse the noodles in warm water after they are cooked. When you are ready to assemble the soup, place the noodles in the bottom of the large soup bowl, and place the raw beef on top of the noodles. Add soup broth to the bowl, until the soup covers the meat. Add the scallions, cilantro, and onion to the soup. Serve with the garnish to the side, and enjoy!

31 #SundaySupper: Gluten Free Pepper Steak

Recently I had the opportunity to participate in the #SundaySupper blog group. For those who are not familiar, it is a weekly themed event where food bloggers share their recipes and discuss the theme on Twitter than Sunday evening. This Sunday, the theme is Back to School Meals. These are recipes that are easy to make for a family and are easy to scale.
My choice for the event is pepper steak. Its a dinner that is affordable and quick to make. It's something that my mom would prepare for my family and me when I was in school, and is the first dinner recipe I think of for this topic.

The main items to be concerned about when making this gluten free are the soy sauce and the corn starch.  Be sure to purchase gluten free soy sauce and corn starch. Also, feel free to omit the corn starch if you have a sensitivity towards it. The purpose of the corn starch is to thicken the sauce, and tastes just as great without it.

Here's my recipe:

30 minute Gluten Free Pepper Steak

Preparation time: 5 minutes
Cook time: 20 minutes
Servings: 4 servings

beef, onion
Ingredients
2 cups water
1 tbsp butter
1 cup white rice
half of 1 yellow onion, diced
1 tsp garlic powder
salt and pepper
1 lb top sirloin, sliced into strips
3/4 cup gluten free soy sauce
1 tbsp gluten free corn starch
1/8 cup sugar
1 bell pepper sliced into strips

Steps
In a medium saucepan with a lid, boil the 2 cups water and butter. Once boiling, stir in the rice and cover with the lid. Reduce to a medium low heat  and cook for about 17 minutes.

In a large skillet, add a tablespoon of olive oil and cook the diced onion until it is lightly translucent. Add the garlic powder, salt, pepper, and beef. Cook until the beef is no longer red, stirring occasionally. 

While the beef cooks, stir the sauce, starch and sugar together until there are no more clumps of starch. Pour the sauce into the pan, and cook for an additional 3-4 minutes, or until the sauce thickens. 

Fluff the rice before serving, and enjoy!

0 Gluten Free Shredded Beef

Hey everyone! I hope y'all had a good weekend, and aren't having too many allergy attacks. Virginia is currently going through an early spring this year, and it has been tearing up my sinuses over the past week. The tradeoff is well worth it, as I'm now in the mood for fresh produce and the ultimate food of warm weather: barbeque. 

I have a mean pulled pork recipe that I plan on sharing this year, but for now here's my recipe for shredded beef. Best part? Cooked it in a pressure cooker, which cuts down the cook time incredibly. 

Now despite the fact that faux-slow cooked chuck roast tastes amazing, everyone really knows the meat in a barbeque is nothing without the sauce. There are several schools of barbeque sauce, and I prefer mine with a lot of vinegar, similar to Carolina style barbeque.
I hope you enjoy this recipe!

Prep Time: 1 hour
Cook Time: 35 minutes

Ingredients
2 tbsp paprika 
1 tsp cumin
1 tbsp garlic powder
2 tsp onion powder
2 tsp salt
1 tsp pepper

2 lb rump roast
1 tbsp olive oil
2 cup water 
1 small yellow onion, chopped
1/2 cup gluten free ketchup
1/4 cup white vinegar 
2 tbsp honey
1 tsp cumin
1 tbsp garlic powder
2 tsp onion powder

Steps
Set a pressure cooker over medium high heat. Combine the paprika, cumin, garlic powder, onion, salt, and pepper in a bowl. Rub into the rump roast. Add some olive oil and brown all sides of the roast, about 1-2 minutes per side. Add the water and onion to the pot, and cover with the pressure cooker lid. Once the pressure is sealed and the reaches optimal pressure, cook for 35 minutes.

While the meat cooks, combine the rest of the ingredients in a saucepan and cook over low heat to create a sauce.

Once the roast is cooked, remove from the cooker, and let sit for 5 minutes. Shred the beef with 2 forks, and combine with the sauce. Serve with rice or collard greens and enjoy!

25 Greenslove: Gluten Free Balsamic Arugula Salad


Hey everyone! I've had a fairly busy past month with all things work and life related, but I'm excited to be ramping my blogging up again, starting with #greenslove. I became overly excited with the theme of greens this month when I walked into my local Whole Foods and saw all the amazing, colorful, fresh produce.

There's already an amazing amount of green recipes thus far, and I'm excited to share my first of the month, an Arugula salad interlaced with bell pepper, topped with london broil, feta cheese, fresh herbs, and a balsamic dressing. I just love the combo of the bitter greens, the richness of the beef, the saltiness of the feta, and the sweet addition of balsamic.
Its a great recipe to use if you have left over london broil, and if not it can easily be substituted with leftover chicken.

Gluten Free Arugula Salad with London Broil & Balsamic Dressing
Prep Time: 10 minutes
Servings: 1

Ingredients
2 tbsp balsamic vinegar
1 tbsp olive oil
1/4 tsp onion powder
1/4 tsp garlic powder

2-3 handfuls of baby arugula and frisee
1/4 bell pepper
3-4 thin slices (as thin as you can get!) of london broil
sprinkle of feta cheese
2 sprigs of fresh thyme leaves
dash pepper


Steps
In a small bowl, whisk together the vinegar, oil, garlic, and onion powder until well combined. Set aside.

Thinly slice the bell pepper into strips. In a single serving bowl or plate, mix together the argulua and bell pepper. Fold the london broil and layer on top of the salad. Sprinkle the top with the feta and thyme leaves. Add a dash of pepper, and hooray! A quick, single serving salad for a dinner or lunch.
